I'm going to be picking up an EFI tank on Monday so that I can run my G16B in the Sierra.

I was just wondering whether I should get Jimny tank or a Vitara tank, as they can both be had for the same price?

Vitara.

Jimny is a long skinny tank that sits in front of the rear axle and runs along the car.

Not a good option for a Sierra. It might be able to be made to fit a LWB, but not a SWB IMHO.
