Is there any cons to running shocks sutiable for a 2" lift in my sierra on the road for a few weeks on stock height before i lift it?

As long as they arent too long when fully compressed, they will be fine.

None at all.

A shock used with 2" lifted springs must the approximately the same length fully compressed as a standard shock, otherwise custom mounts or bumpstop spacers would be required to prevent damage to the shock or mounts. They will fit and work fine.

As an aside, many aftermarket shocks sold for sierras actually have less travel than the standard shocks. They are typically a little longer fully compressed, which makes them a little bit longer fully extended. Increasing shock travel more than about 25mm from standard requires work to be done to the car to fit the extra compressed length in.

Compare compressed length with your old ones first to be safe

At road level the distance from the bumps to to the stop is about 6cm. At the same level from top of shock to rear of shock is 40cm. Am I right in saying that when the car is flexed to the bump stops the shock will be compressed to 34cm? So I am ok fitting shocks that are 31cm fully compressed and they won't bottom out

You have to account for the bumpstop squishing a little but if your measurements are correct then that shock sounds about right, it will allow the bumpstop to compress 30mm before bottoming the shock.
