ive always asked them not to as you never really know what they have used or if it was applied properly.
it not so much of an issue say for a chassis but on panels it means every tiny bit must go before you can prep yourself.
I have had great success with a light coat (just past see through) of galmet zinc spray and have had things sit without any surface rust for 6 mths or so. you then get a rag with GP thinners and just wipe of the primer back to a clean panel/part and do your work/prep. if you dont finish the repair a haze of gal primer back over the spot until your ready again.
finger prints are your worst enemy with blasted steel , touch that metal with your hands and you will have rusty finger prints next day.
