Being new to driving these car I was shitting bricks the first time I drove through stormy weather, the crosswinds felt like it was picking up the car and shifting it half a meter horizontally while driving. Is there anything that can reduce this? Is it dangerous? I thought wider tyres might help but admittedly I know very little about cars.

You need to determine that there isn't an actual problem. Sierras aren't great in crosswinds but they're not "frightening"

Confirm caster
Tyre pressure
Condition of suspension bushes
Condition of all suspension link brackets for bolt tightness, wear or cracks
Condition of shock absorbers
Toe (the only alignment adjustment on a Sierra)
Adjustment of steering box
Tie rod end condition
Kingpin condition
Wheel bearing condition.

At 216k it's likely there's significant wear on many of the moving parts. This will all add up to make the car track poorly.

Don’t underestimate this as a partial cause of the problem. I’ve found with many Sierra (different car I know) that it takes a while driving the car to become comfortable driving it. While I wasn’t relaxed and familiar with the car it was not behaving well on the highway. Once I was more familiar and used to the car it worked perfectly well (sort of).

Especially if you’ve been driving a newer car which are more refined and have less wear and tear, tighter tolerances and a different feel.

Please know that I do NOT advocate that you don’t check all the things Gwagen listed, I highly suggest you do.
