I had an unfortunate accident the other day which resulted in an overturned zook. Damage is mostly limited to the drivers door and windscreen frame, are these parts interchangeable between all model years or do I need to look for specific parts?

There are detail differences, but like Gwagen says, just about anything goes.
Any Sierra door from 1981 to 1998 will fit in the hole. A later door (1988 on) will have a bigger mirror. A 1996-98 SJ80 coily door has a much fancier door trim - might not be able to fit your trim straight onto a Coily door without extra holes on show?

Your windscreen frame should have wiper arms held on to the spindle with a small bolt accessible when you lift the arm away from the screen.
A later frame will have the arms held on in the more usual way, with a nut under a plastic cap. If you swap a complete frame assembly over, all good, but if you get a later 'bare' frame, your original wiper pivots will be the wrong length.

Thanks for the info, I started stripping parts off the windscreen frame today and it looks like I've got the later style wipers so I guess the frame has been swapped before.

Yep, that's entirely possible & why I said 'should' - anything could have happened along the way, to a car that is 36 years old.
A common rust spot is the bottom corners of the windscreen frame so that might have been a reason for a swap over as well.
The later type is an improvement & is easier to find, as the Maruti also used this later style & they've had less time to rust!.
