So I am assuming I blew a wheel cylinder last night. I haven't pulled it apart yet, just saw fluid all over the back of my hub and all over my exhaust.
The brake light came on and brakes felt spongy.

Now heres where I am confused about:

1) there was still a fair bit of meat on the shoes. Could the cylinder pop out if the shoes still have some meat left?
2) or is it more likely something has let go and the shoes moved behind the wheel cylinder etc causing the wheel cylinder to pop out?
3) lately there has been something wrong with the brakes. Occasionally, the hand brake would work fine/nice and tight. and other times I would lose the hand brake all together.
You couldn't pick when....just randomly would work.
Occasionally, at highway speeds I would get vibration through the handbrake cable?

4) one of the adjuster springs (goes from one shoe to the other) is warped. where can I buy one? (on the other wheel so it had nothing to do with it)

Anyone recommend any decent brake specialist in Caboolture area?

Sounds like it hasn't been put together properly. There is no way a wheel cylinder will pop out under normal conditions, even when the shoes are completely worn out. Strip it apart and have a look, post up some photos if you're unsure

Im pretty sure they sell full Drum brake kits on ebay. - relatively inexpensive too.
