Try S Randall Motor Trimming in Ringwood (03) 9876 9922 he is one of my dad's mates and was pretty good at it been doing it since the 90's

He can do custom work, but depending on what you need doing the industry usualy has off the shelf bits for foam etc

Design Auto Interiors in Bayswater, more into classic car trimming but does very good work, guys name is Sel.
Straight line trimming, also in Bayswater, more into boat work but has done some wacky jobs for the boss.
