I have EFS leafs and want to soften the ride. My question is which leafs to remove. I have attached photos If that will help.

Others may have a different view, but I'd pull the bottom leaf on both front and rear, and perhaps the on the rear the second to bottom leaf as well.

There's a limit to how soft it will get - Each leaf is quite thick.

Taking the swaybar off might reduce harshness a little too, especially as I imagine it's quite tight at that ride height.

Don't rule out the impact of shocks on ride quality. If you're curious take it for a drive with no shocks in it once you've derated the springs (yes, really) and see how it rides. Most aftermarket shocks are excessively stiff on Sierras.

I did what Steve said and removed the bottom leaf all around and the sway bar the ride got better and it still carry's a load well.

So the third down from the top? Or the short one at the very bottom of each stack?

The very bottom both front and rear, and consider taking the next-to-bottom on the rear leaves as well.

Ended up welding up a rust spot in passenger floor pan last weekend. Might try just the bottom spring all round and see how it goes. Finally got rego and drove it to work today. Felt every bump and was slow as a wet week. Loved every minute of it!
