need to change my rear diff pinion seal, what torque should I do the output shaft nut up to?

If your torque the nut up as such chances are you will change the preload on the pinion bearings and change the position of the pinion compared to the crownwheel.

Just tighten the nut enough to remove any end float in the pinion (so the crush tube dosn't 'crush' any more than it already has) and lock the nut in place.
