So I've followed all the steps and lined everything up correctly, but when I tighten the cams down they move out of timing.... Any ideas? This is on the left side, right side is fine..

You will have to keep the cams tight. It's a pain I know. Two people are best at this for the extra hands. Once done you will notice when you move the crank there is some slop before the cams turn. This is normal.

I needed to use a spanner (on the hex part of the cam) to hold them in the right position while I put the chains on. Absolute friggin nightmare of a job doing it solo.

As you've already found once they are torqued down they will be 20 - 30 degrees out from where they need to be. Thats when you get the spanner on them to hold them in position while you chain it up.
