I have a wide set of rims and a narrow set steelies for my 99 jimny, which would be better to have a set of 215 75 15 at tyres on ?

Narrow/standard rims. A narrower rim will hold onto the the tyre better allowing you to safely run lower pressures offroad.

X2 215's seem happiest on stock rims (5.5")

my 225s are perfect on stock rims if only they had bit more offset

I went an extra 1/2" to 6" rims and the 215's still seem to be good on that size.

I don't think there's anything wrong with 215's on 6's either. They get pretty stretched out on 7's though.
