I am looking at getting the seats in the LJ50 redone. Is this the best thing to do or can i pick up some a different brand or seat pretty easy from a wreckers etc that will fit?

If it were me I'd have them redone at an upholsterers as long as they aren't completely screwed. Take them down for the upholsterer to have a look at and I'm sure they will give you a Good idea.
The uneven length mounting legs that form the base of the LJ seats are unique to LJ50/80/81. You won't find anything else to bolt in. The width of the seats are fairly narrow, too, so making up a base to mount another type of seat will have to be higher and either hang over the trans tunnel, or be offset towards the door. This is bearable in a softtop 50 or 80, but a pain in the hip with hard doors.
Get the original frames recovered. You can go vinyl again, but my choice would be canvas.
