i think ur up for a engine rebuid mate,,
i got a fresh (original 1.3) with minor mods, the longest of all 3.7 diffs, 31s and i can sit on 120ks on the h,way. admitably its a bit doughy on the big rocks but not every one wants to climb vertical walls
( why is there so much sledging on this forum?? if u dont have any helpfull or positive feedback dont post)

My swb would do 100kms comfortably in 5th gear even around hills. When I went to 235/75 15's I gave up on using 5th, even on flat ground. Hills I used to climb in 5th I now needed to go to 3rd, and would normally be forced to slow to around 70km/hour.
Gearing IS required onroad for this size or larger. Offroad, lowrange is crippled. Your clutch will cop a hiding on anything other than a basic forest trail.
I have a 2" exhaust with extractors, hi-flow cat and straight through muffler, and an engine with 20,000ks on it that was rebuilt and balanced not that long ago.. but other then that its just a stock coily.. it will easily sit on 110kph on the speedo at around 4,000rpm in 5th, and I have on a few occasions had it up to 120kph on the speedo under its own steam..
Having said that, Sutho runs the same size tyres as me and he struggles to get out of 4th gear so
I only ever drove my car with 215's, so I don't really know what stockos feel like.. But the 235's haven't caused me any dramas.

On a second motor for this car. Have had 31's on a sierra I previously had.
All shithouse to drive. But you know everything, so I apologise.
He doesn't want feedback he wants an answer to a question. I have an answer. Which is helpful to him.

I did 140 downhill on the freeway near mooney mooney bridge
But that's not real life.

I used to think it was fine with 235s and even went to 30s on my Sierra, had driven zukes that way for 15 years. I managed to drive it on and off road without any real problem.
Once you fix gears once you'll never go back because then you realise that the zuke performs twice as good. If you're happy with a zuke with below par performance chuck on 31s and blindly ramble along, but if you want a true performer fix the gears.

If its pulling that RPM of course it will work!
A bog stock sierra WT pulls 3200-3300RPM at a true 100KPH in 5th. With 31's a true 100 in 5th will be around 3000RPM which is really starting to get away from the torque peak. It may pull it on the flats and may wind may and may hold 120KPH but it will be foot to the floor or very close to it. Any incline will kill it!
If you want the thing to drive nice she needs to be cruising at a minimum of 3400RPM.
The issue offroad with stock gearing and large tires is the minimum possible speed you can do with the clutch fully disengaged and not stalling. Again on fairly flat hard packed ground it may be able to just idle around no issues, but once you approach an obstacle you need more torque from the engine and thus have to raise the RPM and hold it there to keep it from stalling thus you will find your self doing around 10-15KPH which is great if you want to uncontrollably bounce your vehicle into everything around it! (Glasshouse in the old days, ask Roycie, this setup was very amusing to watch but the vehicles became less capable compared to the ones with smaller rubber).
WT's with their 3.7 diffs and big rubber are completely shocking compared to the older 3.9's in the NT's. I don't know what ratios the coily's run but with the RPM and speed Myles posed up they must be around 4:1 diffs.
