Why do you want to go to 7 inch rims?

215s will be too narrow for 7 inch rims. The only reason for wanting to go to wider rims should be that you want to fit wider tyres... It doesn't make any sense to go to 7 inch with 215s....

i'd go a 235/70r15 on a 7" rim... so 9.25" wide tyre instead of 8.4" - a 235/70 is also a 28" tyre, while your 215/75 is a 27"... so not a massive difference in height but a good difference in width - and most 15x7's have way more offset that standard rims (which have none).

EDIT: the hankook's you're running now come in a 28x8.5r15 =)

it wont be a problem, remember tyres are held onto teh rim by pressurised air not the angle between the edge of the tread and the rim lip

This is true, but when you air down off road I know a lot of people find that if their rim is too wide for the tyre you end up with lots of mud in the beads and flat tyres...
