This is how to take a uni apart, putting it back together requires a brass drift a hammer and another uni.

you can just push them out.

pull the circlips, give each side a tap with a hammer to loosen them. then with a socket the same size as the caps & a large socket to receive the cap getting pushed out.. line it all up & stick it in the vice...

pretty much the reverse order of install, saves firing up the grinder

Sierra uni's are usually really really stuck, I tried your method gus but I bent the flange the uni's press into.

I've done both of these ways, you just have to remember, punch it all the way to one side (bash the cap right in so the other one comes out as far as you can get it (into a large socket).
Turn it over, sit the other side on something hard and tap the shaft (the horizontal bits pull the uni down out of the cap that's pushed out, and push the other cap down far enough to get the uni out, then you can tap the caps through or whatever you like.

Same goes for getting the uni out of the other part of the shaft, just tap the arms of the cross instead of the shaft on the second part.

It works heaps better than forgetting that you can knock the shaft to push the other cap out and sitting there wondering why you can't get the bloody uni out...

Oh and tap the new one in VERY carefully and slowly, knock one in all the way then as the other one gets close, bring the cross back so it's partially in both, then keep tapping. I've destroyed at least one thinking it would line itself up if I had it all going in square.

When i did my uni's you hit the knuckle when the hammar and works the caps out and it comes apart....... may need to apply penetratent but it works quite well.

only when i put mine together a roller fell inside and would close up enough for the circlip :(
