Is it possible to swap the diff centers from front to the rear? ie just exchange the ring gear on each. on a 95 sierra with coil suspension.

No, not on a coil sierra. Front and rear ring and pinion is completely different front to rear.

Leaf sierras have the same R&P front and rear.
