This is not your standard asking for help thread, so I'm unsure if I've put it in the right area, but here goes..

I'm about to buy a "factory" AC kit for my SJ80, but I have no idea what to expect, so I wanted to check out an already-installed A/C setup so that I can protect myself from being ripped off.

Is there anybody located around SE Melbourne, with FACTORY installed SJ80 AC that I could swing by and have a glance at?

There isn't much to it.
Compressor and bracket.
Front crank pulley and belt.
Hose to condensor/drier.
Hose and pipe to firewall.
Under dash unit (evaporator)
Small wiring loom and switch.

I guess I'd like to see how it all actually fits together.

I was told you have to cut the under-glove box tray in half to fit the evaporator, and I can't find any decent pictures of what it all looks like on an sj80

Cutting the shelf is the easiest part of the whole deal. If you have concerns about that then you should consider getting someone else to do the install.

It's just an aesthetic thing, the work will not be a problem.

Nothing has had to be cut.

Main issue is that I cannot find the A/C manual for Sj413/SJ80 anywhere!

Incredibly odd move that suzuki decided that A/C wasn't important enough to be included in the standard FSM, it means that I cannot find any trace of this document anywhere online :/

I've found the one for the SJ70, but as you can see, it's definitely a different install.
