I had a quick look under the ute yesterday to discover the rubber boots front and back have spilt and are spitting crap all over the show..

How vital is it to get those replaced?
Time frame?

Driveshaft boots?

Prolly not a huge problem if they are greased properly. They can't be that dear though, I would replace them as soon as you can.

Grease gets out, which means dirt and shit gets in, which will flog everything out sooner rather than later. Do them ASAP to save youself some $$$ down the track

What rubber boots are we talking about? Steering joint (tie rod) boots or driveshaft slip joint boots?

Any driveshaft shop should be able to track one down for you. They may even have one on the shelf.
