They're sort of two conflicting things. Increasing on road ability generally reduces off road ability. I'd consider an Old Man Emu suspension kit which will improve handing and ride, and slightly improve of road ability. I would definitely fit a compressor - the biggest thing you can do to improve a sierras off road capability is let the tyres down, so being able to pump them back up or reseat a tyre on thread if you get carried away and deflate the tyres too much is a good idea. Other than that, extended diff breathers, ensure the charging system is in good condition - thats the basic stuff that won't compromise the car on road.

Do you have access to spray equipment/a booth? if not, a respray is going to be very expensive. You can slap any paint on it you like, but a poor paint job generally looks worse than bad factory paint.

Sure, more weight means more change of getting stuck. Best thing about passengers is they can get out which foxes the problem if there's a particular stretch of sand or obstacle that's a problem. A sierra, even fully loaded, is superior in sand than pretty much any other vehicle so don't worry too much about it. Let the tyres down (try something like 12 PSI initially) and you'll pretty much get where anyone else can. Don't put jerry cans on the roof. I'm not from Queensland, but from what I can see, there's at least one servo on Bribie. I don't know why you'd need 80L of fuel to drive around an Island that's not very big.

I can't comment on fuel requirements on Fraser island, but long range tanks are pretty expensive and heavy. maybe take your jerry cans and leave them at camp and enjoy a lighter car with better ground clearance.
