So yeah looking at trading my white rims shown in the first picture of my build thread for some bigger off set ones

they look like 1lt sierra rims with the hole for the drum brake... no wonder you're having tyre rub issues.

Those ones don't rub there 205 tyres, its my 30's on the standard steel rims that rub
