I want some with more meat and mote aggressive tread pattern. Do you think I can fit 31x10.5 tyres on 15x7 rims or is that too risky ?

Will the tyre fall off the bead on a 15 x 7 rim easier?

15x8 have a wider offset. And clear the springs better.

-12ish on 7" rims (31" tyres hit the springs) -23ish on 8" rims (31" barely take the paint off)
