Yes, a WT body will bolt to a NT chassis.
Yes a ute cab will bolt to a SWB chassis. You will want to stab yourself in the eye with a fork when it's finished though, they are incredibly ugly unless you stretch the wheelbase A LOT.
I'm going to start this response by saying I've assumed you are chasing high speed performance, which is why you want compression travel, and that's how I've considered the problem. If that's not the case, I'm not really sure what you are trying to achieve.
Yes, if you took the bumpstops out the diff with smash the sump (they can touch even which stock bumpstops if you jump the car)
Yes it is possible to raise the engine. Bear in mind that raising the engine 50mm is likely to create cooling problems unless you also raise the radiator and fan shroud.
Raising the engine, radiator, and body 2" is a bit silly IMHO - the centre of gravity will go up almost as much as if you'd added the 2" of extra suspension lift to the springs.
I assume you are into high speed work which is why you are looking for compression travel? If so, the last thing you want are smaller bumpstops. even stock bumpstops are a bit too small to work well at speed. bumpstops are supposed to slow the axle down progressively to try and prevent it rebounding and making the car uncontrollable. The size of sierra bumpstops is part of the reason they are choppy at speed. Smaller bumpstops will only make it worse. As an aside, smaller bumpstops will pull the spring harder into negative arch when compressed, which dramatically shortens spring life.
If it's speed you are after I'd be looking at a spring with more length and more arch than a stock sierra front/rear spring. Have a look at MK patrol front. These are 60mm wide, longer than sierra rear, and have lots of arch. This should give you the height and compression travel you are looking for. Obviously, spring hangers, plates, shackles etc will need to be modified, and you'll need a chassis extension similar (but longer) than a RUF setup. Shock mounts will need to be custom, but that would be required once you fitted smaller bumpstops anyway. You'll want some very good quality shocks (I'd consider Bilstein 5150's or similar.
Unlike my normal advice, if you are looking for speed, I wouldn't run a body lift - run all the lift in the spring. You won't want very big tyres as they will screw with handling at speed, so the clearance of a BL isn't required.
Steve.

If you fit a 1.0 ute cab to a WT chassis you will run into issues with the fixed studs not being long enough to go through the mounting rubbers.

thanks heaps.just for curiosity sake if any ones interested talkin about mk mq ive got a few here and roughly measured the width across the front of car hanger to hanger ,it seemed to be spot on to the wide track .maybe the diffs would fit ,but geeze thier big heavy diffs. another thing the carby holes are exactly the same as sierra carby...i done a bodgy carrolla swap the other day and didnt have any short bolts ,so i pinched the studs and spacer from patrol and fitted, couldnt believe it ran. so if it interests anyone i think the carby would fit with a bit of work

Yes - MQ Diff swaps have been done. Yes, they are big and heavy - no point unless you are planning on 36" tyres or bigger.
This car ran MQ Diffs.

So did this one:
You haven't given us any more information on why you are chasing compression travel though, or how much work you are prepared to do to get it.
