3cyl is on the money with the wheels/ tyres.
The sierra 15" rims will lower your centre of gravity a little, which is a good thing.
Try and keep everything looking standard so Mr Plod has fewer excuses to hassle you- as a new driver expect the Police to be keeping an eye on you!
I would even avoid alloy wheels and stick to standard steels. Try and keep the offset standard so guards dont need extending.
Any bar work needs to be kept simple - the pic you put up of the side bars looks good.
If you keep it loooking 1970's you cant go wrong, plain steel barwork suits LJ's- flashy shiny ally never looks right (in my rather dodgy opinion)
As for half doors, LJ's came with a bit of bent pipe!

But that sierra is my sisters, I dont think she would like me taking them. But it wont hurt to try them on for size.
