I have a 2015 Jimny and want to fit a bull bar. ARB stopped manufacturing in 2011 before the face lift. Will the 2011 bullbar fit a 2015 model?

The ends of the chassis rails post 2011 have a crumble section, so the bar itself will fit but you would need to modify/customize the mounts to bolt it up.

And the ARB is not rated as being air bag compatible - this has safety, insurance & RWC implications.
Outback accessories do traditional style and Xrox tube winch & airbag compatible bars for the up-date Jimny.

Managed to see a pre2012 Jimny with an ARB bulbar fitted. The front ends of the chassis are still full box sections whereas on mine they are U sections with a crumple section. Interestingly Outback Accessory bulbar make up 2 U sections to go around the post 2012 chassis to sort of encompass the crumple section. Wouldn't this negate the front impact characteristics for compliance anyway?
I just liked the look of the ARB model rather than the loops of the Xrox and Outback.
The Outback commercial is probably what I will do as it is compliant.

Given people still run 5 poster bars in the outback and get insurance cover, agreed it's not in strict compliance with ADR's etc - i'd not be too worried unless you sell it like that down the track.

Your airbags might go off in a lower velocity impact or go off sooner than designed which means they might be deflating by the time your body hits them.

I'm modifying the crumple zone a bit on mine but will keep all the parts when I sell it

Just keep in mind that getting insurance cover and having an insurance claim paid are different things. You might find that if you modify a vehicle that insurance companies may try to dodge paying a claim
