Coil model with 30"wheels, steering felt loose, put on original wheels to help diagnose what it could be. With the issues still being there, decided it was caster related, and that was that. But the weird thing is that steering is now incredibly heavy with the smaller (26"?) wheel

With 30s I can park singlehandedly, but with original wheels, I'm using both hands and struggling!

Everything I've heard/found is telling me bigger wheels= bigger effort, Any ideas how larger tyres could possibly be easier to steer?

possibly related to the offset of the rim.

if the tyre is pivoting on the centre of the tyre's contact patch, it will turn much easier than if the tyre's contact patch is being dragged back and forth due to excessive offset.

It could be that your taller tyres have better offset, harder rubber, higher pressure and not so grippy tread pattern compared to your "original" wheels.

Personally I have found it's the other way around - zero scrub radius, which is where the tire pivots in the center of the contact patch is heavier with the vehicle stationary or moving slowly with more or less offset the tire rolls as it pivots.

But as stated, it is likely to be related to the rim offset, and also tire width.

Tyre pressure + offset

I'll bet those 30" tyres are at 45psi or something stupid, right? That plus scrub steer from offset rims makes the steering lighter.

Drop your 30" tyre to 25psi front and 22psi rear and see how it feels.

Now, given all that, how much slop is there in the steering box?

Standard tyres are road pattern and therefore present more rubber to the road with less tread squirm than the more aggressive tyres.

What pressure is in both tyres. If you have the same pressure in both tyres the stiffer 30" tyres will offer a smaller contact patch, +the effect of tread squirm and reduced contact due to tread pattern.

It's a very effective way of demonstrating how much less on road traction you have when you run aggressive tyres on the road.
