So i've seen the thread on 7"s and 10.5s.. But! how about,

33x11.5R15 Simex Jungle Trekker 2's.. On Sunraysia 15x7 rims
Is it a good idea? Or should i track down some 15x8's?

Also considering 33x12.5R15 Mickey Thompson MTZ's.. If the answer to the first question is: yes, 7" will work.. Will they work with these too, being 1" wider tyre?

definately get 8's.

Anything over 10.5" wide belongs on an 8" rim minimum.

I've got 32 x 11.5's on 10's. They fit, but 12.5's would have been better.

Only go 10's if you buy 12.5" wide tyres.

Personally I think 12.5's are too wide for a sierra.

I'm going to get the 33x11.5 Simex's.. Unless i can get the 33x12.5 MTZ on a better deal, which is unlikely but who knows

i ran 32x11.5 maxxis on my hilux for 4 years on 7" sunnies.Never hada problem,it looked good and i used to air them down to about 15psi.
I now run 33x12.5 maxxis on it on 8" rims tho.

my zook is on 15x8s with 31x10.5 and i run old cheap hankook muddies,i dunno if the tyres are the problem of if its the 8s,but i have done numerous amounts of beads out wheeling going down to about 10psi.have done a few at full pressure too

Well i'm definantly leaning towards the 33x11.5 Simexs.. But i think i still might go the 8" rim.. And sell the Kumhos and 7"s as a set
