How can you tell a wide track and narrow track sierra? Is it just the length of the diffs? Or other factors?

Its possible to have a NT with WT diffs, worth looking out for.

You could have Sierra or Hilux or Unimog diffs under a Zook and it won't change wether it's an NT or WT...
NT has front spring perches directly under chassis rails.
WT has front spring perches approx 30mm outside chassis rails.
