Can you put rear seats in or are they all two seat utes.

yes you can have ones with rear seats.
they came in a ute and a style side configuration

Depends what model.
Jap spec, 4 seat
Indian spec, 2 seat

Are the jap and Indian tubs different or is it just the way they were licenced?

my '86 LWB sometimes has a rear seat, and is rated to seat four on the rego papers. The load rating on the rear seat is quite low from memory, really only one adult....and not a large one at that.
